Breakfast Taco

Yesterday I posted a picture of my new go to breakfast on my Facebook personal page and like page. I promised that if it got 30 likes I would share the details! Well, I got over 50 so here it is!

Here's what you need:
- 1 egg 
- 1 small corn tortilla
- a little more than 1/2 a cup of fresh spinach
- 1/8 cup shredded cheese
- 2 slices of turkey bacon

Spray your griddle lightly with non-stick spray. Place tortilla, bacon, and spinach on griddle on low to medium heat. Flip tortilla and bacon as spinach cooks.

Once the spinach is about done, crack the egg on top of the spinach

Use a spatula to scramble the egg and spinach together while keeping the egg from running away. 

Once the egg is almost done, sprinkle the cheese over its top.

Here's the secret ingredient missing from the first photo! 

I love spicy food, and this stuff adds the perfect kick without the salt! Shake some on your egg mixture, and then slide it onto your tortilla.

Fold it in half, and your breakfast taco is complete!

Browning the tortilla and cooking the bacon and egg mixtures takes less than 10 minutes!

This is a quick, simple, healthy breakfast at less than 300 calories that is 21 Day Fix approved! One egg and 2 slices of turkey bacon equals one red. The tortilla is one yellow. The spinach is 1/2 a green, and the cheese is 1/2 a blue.
